This wedding cheese cake incorporates the following cheeses:
(bottom tier upwards)
2 X Neufchatel Heart 150g each - This brie heart-shaped cheese is very soft and creamy, unlike other soft-white-rinded cheeses, it has a grainy texture. This cows milk cheese that originates from Normandy is very easy to love and is a perfect addition to compliment a celebration cheese cake.
2 X Blagdon Blue Truckles - A creamy local cow's milk cheese, streaked with blue veins but not over-powering on the palate. The mould ripened finish, gives this cheese a fantastic artisan appearance that will compliment any cheese cake. This truckle contains approximately 250g worth of cheese.
(bottom tier) Cuddy's Cave - Handmade at Doddington Dairy, this is a hard cheese with a smooth texture. Cuddy's Cave holds a mild nutty flavour, with a long finish. Matured for between 2-5 months, during this time it develps a eye-catching hard rind.
(first tier) Nettle - This is one of our local Northumbrian cheeses made on the Blagdon estate. It is a very smooth, creamy cheddar which is not too strong, this making it appealing for a wide range of palates. Nettle cheese is made with real herbs and nettles, that dont sting! Very popular among children.
(last tier) Old Smokey - This is a strong and very creamy Scottish smoked cheese. Old smokey is an extremely popular firm smoked cheddar, making it a great addition to finish of any cheese celebration cake.
